Chicken Afritada


Chicken afritada is a family favorite, I mean me, my parents and my siblings' favorite. Whenever we celebrate a special occasion, this is always served. When I say Always, I really mean always. :) Anyone of us maybe be absent, but not my mother's chicken afritada.

I would like to ask what your version of chicken afritada is (you may write it on the comments area below). I asked because I have noticed that some afritada are not sweet to the taste. I love that version a lot but my big baby wouldn't eat any of it. Maybe kids are generally like that, they like sweeter dish, or maybe my kid is just accustomed to my mom's and my cooking. So for this dish, I'll be sharing to you our chicken afritada recipe with evaporated milk. I hope you'll like this as much as we do. :) Here goes...

1.  Fry potatoes till light brown. Set aside.

2.  Fry chicken till brown.

3.  Move the chicken aside. Saute garlic till brown and onions till transparent. Put the chicken cube in.

4.  When the cube has melted, mix everything together and add the tomato sauce. Stir.

5.  Add water and let boil. Simmer for 20 minutes.

6.  Add the carrots and potatoes and simmer for 5 minutes.

7.  Add the bell pepper, evap and green peas and simmer for 2 minutes.

8.  Add a little sugar, salt and pepper according to taste.

9.  The chicken afritada is now ready to be served. Enjoy!
