Adobong Atay ng Manok with Eggs

Are you a fan of chicken liver? I bet you are. Do you love adobo? I'm pretty sure you do. Every Filipino loves this dish. When you cook chicken liver adobo style, hmmm, ssarrrap!  My mother is a really good cook and she can make great tasting "Adobong Atay ng Manok" but she seldom does it.  I am actually a big fan of this dish especially those sold in cafeteria near the schools. I've had so many lunches where I ordered this Adobong Atay ng Manok, of course with boiled eggs. 

When chicken liver is cooked adobo style, i always find the dish mixed with boiled chicken eggs. The eggs complement well with the liver when it comes to taste and texture and the eggs make this dish look appetizing. I also love the fact that it doesn't take so much time to cook and doesn't involve a lot of ingredients, two considerations to make a dish good for home cooking.

So to make Adobong Atay ng Manok with Egg, here's the recipe.

1. Saute garlic till brown then add onions. When the onion turns transparent, add ginger and saute for 2 minutes.

2. Add the chicken liver and cook till the liver completely changes in color.

3. Add soy sauce, water, vinegar, peppercorns and bayleaf and simmer till sauce reduces.

4. Add sugar, boiled eggs and bell pepper. Simmer for a minute or two.

6.  The Adobong Atay ng Manok with Eggs is now ready to be served. Enjoy!
