Fudge Brownies

Chocolate in many forms is so irresistible. Fudge brownies? Not an exception. What draw me to try learning to bake these delightful beauties is it uses vegetable oil, not butter. So I initially thought i can s-a-v-e on desserts. One drawback however is it uses 4 Eggs! So what you save on oil, you pay for more eggs. But hey, not bad. You can have 24 slices of these brownies for 4 pesos each. Great huh? :)

I got the ingredients from this site. I think recipes here are simple and easy to follow.

To make them brownies, here’s how:
1. Combine together: flour, cocoa powder, coffee, sugar, and salt.

2. Mix well the dry ingredients. Set aside.

3. Combine the eggs, vegetable oil, and vanilla extract in a bowl.

Don’t worry if you scatter some broken eggshells in the bowl. If you have broken over 20 eggshells in succession, surely you will perfect the act. Meantime, forgive yourself for the hideously broken eggshells. Now, remove that crease off your forehead my friend and Oh! the eggshells off the bowl. ;)

4. You may use a balloon whisk to mix the wet ingredients but an electric mixer will make it so much easier.

5. Mix till everything’s incorporated.

6. Divide the dry ingredients to three parts. Put a third in the bowl with the wet ingredients and mix. Add in another third then mix.

Divide them so you won’t have the dry ingredients flying everywhere when you mix them and it helps the ingredients blend better.

7. Add in the remaining dry ingredients and mix.

8. Place the mix in the pan lined with wax paper. Bake at 350F or 176C for 35 minutes using a convection oven.

Please note that I am using a convection oven here, so if you have a microwave oven, some use only about 20 minutes. Cooking time may vary.

9. When your brownies start to emit that delicious smell from your oven, it prompts you that the brownies will soon be done. When the toothpick or bamboo skewer comes out clean when inserted, your brownies are done. Remove from pan and let cool on a wire rack.

10. Put in the refrigerator for a couple of minutes. This helps the slicing more manageable.

Here, I didn’t put the brownies in the fridge so you may notice that the slices are not perfect. I like the look of the ragged sides of the brownies.
