Chocolate Cupcake Recipe

I have cocoa and flour on hand. And I have butter sitting in my fridge. Plus I discovered how to bake cupcakes without having to buy a muffin pan. First thought to come to mind was bake myself a chocolate cupcake. This particular chocolate cupcake recipe is simply easy, soft and beautiful. Even if this is your first time baking, you are sure to come out victorious. Really. Just follow the exact measurements.

I also have recently learned a little trick how to have a beautiful dome-shaped top or that bulge on top instead of having a flat or soggy-topped cupcake. Read this chocolate cupcake recipe further to know how.

1. Sift flour. If you don't like sifting like me, you can whisk the flour real good first before measuring. Also, level the cup using a knife or spatula. Don't compress or shake the flour. Add the baking powder and salt in the flour and mix. Set aside.

2. In a bowl, cream butter and sugar using an electric mixer.

3. Add eggs one at a time and mix until fluffy. Add in the vanilla extract. Mix again.

4. Add the flour in 2 additions. Beat after every addition. Mix until all dry ingredients are incorporated..

5. Add the cocoa dissolved in hot water in our batter. The cocoa mixture must be at room temperature before adding. Mix just until the cocoa mixture is incorporated in our batter.

6. Fill the cupcake liners with the mixture. Give allowance for batter to rise. Bake at 375 degrees fahrenheit for 20 minutes in your oven. Check once in a while especially if it is your first time using your oven as cooking time vary with different brands.

I have learned that in order to have that nice dome-shape topped cupcake or that bulging top is to adjust the temperature of the oven. Increase the temperature then about midway, reduce to its original baking temperature. In this case here, I preheated the oven at 410F and baked the cupcakes using this temperature for about 10 minutes then reverted to the original baking temp of 375F during the remaining baking time.

There are times though the resulting cupcakes are still flat-topped even using this trick because there are other factors to consider like over mixing for example or probably there's something wrong with the ingredients like expired baking powder. But don't lose heart. The most important thing is the cupcakes should be soft and delicious.

7. Your cupcakes are done once a toothpick or a bamboo skewer comes out clean when inserted. Let cool on a wire rack.

8. Sprinkle with confectioner's sugar or top with your favorite chocolate frosting. What I did here is simply drizzle cocoa icing over the chocolate cupcakes. Enjoy!
